The Living Food Initiative explores the connections between food, microbes, ecology, and culture. Through research, storytelling, and community programming, the initiative brings together scientists, food producers, and communities to better understand the living systems that shape our food and health.

Research & Insight
Partnering to design and develop research in food systems, microbiomes, fermentation and ecology, as well as translating findings into accessible knowledge and meaningful dialogue.

Community Programming
Designing and hosting events, workshops, and conversations that bring people together to explore the connections between food, science and culture.

Communication, Education & Storytelling
Collaborating with scientists, sommeliers, chefs, artists, farmers and food/beverage producers to produce thoughtfully designed workshops, events and educational tools/curricula that share knowledge and highlight diverse perspectives.

About

Hello! I’m so glad you stopped by. My name is Kylene Guse but everyone calls me Ky. I am a researcher and educator exploring the living relationships that shape food. With a PhD in Nutrition from the University of Minnesota, and a background that includes Fulbright supported research, I explore health from the ground up, moving from soil microbes and farming systems to fermentation traditions and challenges like antibiotic resistance.

I am also former co-owner of GYST Fermentation Bar in Minneapolis, which was both locally and nationally recognized, including being named one of the best bars in the U.S. by Esquire in 2018. That experience continues to shape how I think about fermentation, community, and the cultural life of food.

I seek to bridge scientific knowledge, cultural traditions, and ecological systems. Through The Living Food Initiative, I aim to create new conversations about microbes, food culture, and the relationships that sustain human and planetary health.
